Chilled Jellyfish Salad With Chilli Oil
Jellyfish cut into wide, ruffled ribbons — translucent amber, lightly rippled — dressed in a glossy red chilli oil scattered with white sesame seeds, coriander and shreds of cucumber and spring onion. The salad is shown on a white plate beside a window, and again on a white plate on a board in a working kitchen.
The ribbons keep a firm, springy crunch and take on whatever they are dressed with. Serve the salad chilled as it is, or drain the ribbons and fold them through a cold dish with cucumber and black vinegar.
