Fresh Sea Urchin Roe In Shell

Sea urchin opened and cleaned: purple-black shells, still carrying their spines, each holding five lobes of bright orange roe with a soft, grainy surface and a faint sheen. They are shown on a steel bench in a working kitchen, and again on a wooden board beside a bowl of soy dressing and a spoon.

The roe is rich and buttery with a clean marine sweetness, and needs no cooking. Spoon it straight from the shell, set it over warm rice, or fold it through pasta just before serving.
