Fresh Green Seaweed Salad Sheets

Wide ribbons of green seaweed, deep bottle-green where the layers stack and bright translucent green where the light passes through, with soft ruffled edges and a wet, glossy surface. Some pieces are rolled into short bundles. They are shown heaped on a cream plate on a counter by a window, and again on a white plate on a wooden table with a small dish of dressing and a pile of finely shredded ginger.

The ribbons keep a firm, slippery bite. Serve them chilled as a side dish, dress them with vinegar and sesame, or drop them into a hot broth at the end of cooking.
