Fresh Whole Golden Pomfret Fish

Whole golden pomfret: a deep, flat body covered in fine silver scales that carry a warm golden sheen, with golden fins and a deeply forked golden tail. The fish are shown raw in a row of three on a steel bench, then steamed whole on a white plate in a pool of soy with shredded spring onion, and again pan-fried until the skin is golden.

The flesh is firm and meaty with few bones and a mild, sweet flavour. Steam the fish whole with ginger, pan-fry it until the skin crisps, or roast it.

Keep frozen at -18°C or below. Thaw in the refrigerator and cook thoroughly before eating.
