Fresh Whole Yellow Croaker Fish

Whole yellow croaker with a golden-yellow back that fades to a bright silver belly, a large round eye and a deeply forked tail. The fish are shown gutted and cleaned on a white plate on a steel bench, one split open to show pale pink flesh, and again in a row of three laid across a steel griddle.

The flesh is fine, white and delicately sweet, and the fish are small enough to cook whole. Steam them with ginger and spring onion, pan-fry them until the skin crisps, or braise them in soy.

Keep frozen at -18°C or below. Thaw in the refrigerator and cook thoroughly before eating.
